Recipe: Blackened Salmon Bowl with Mango Salsa + Coconut Jasmine Rice

The perfect summertime meal!

For the mango salsa:

  • Chop + Mix together:

    • 1 Mango

    • 1/2 Cup tomatoes

    • 1/2 Red onion

    • 1/2 Red pepper

    • 1 Habanero pepper

    • 1 Avocado

    • Cilantro

    • 1 Lime

    • Agave

For the salmon bites

  • Cut salmon into cubes and toss in olive oil and seasoning (I use premade blackened seasoning because I’m lazy)

  • Air fry at 375 for 12 minutes

For the coconut rice:

  • Bring coconut milk and jasmine rice to a boil then turn down to simmer, cover and let cook for 15-20 minutes

  • Add in cilantro

Assemble your bowl and grub! We hope you enjoy!
