Recipe: Chocolate Chip Zucchini Muffins

Entry level recipe, advanced level deliciousness. Used my favorite Hukitchen chocolate chips which are made with only 4 ingredients and zero sugar alcohols. Use code SWEATANDTELL for 20% off site wide.

Ingredients:

  • 1/2 Cup of Hukitchen chocolate chips (and handful more to sprinkle on top)

  • 1 Grated zucchini

  • 1 Teaspoon salt

  • 1/2 Teaspoon baking soda

  • 1/4 Teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • 1 Cup sugar (or sugar substitute)

  • Dash of nutmeg

  • Dash of ginger

  • 1 & 1/2 Cups flour

  • 1 Teaspoon vanilla extract

  • 2 Large eggs

  • 1/2 Cup avocado oil

  • Optional: protein powder

Directions:

  • Preheat the oven to 350 (rack in middle)

  • Coat muffin liners with avocado oil spray (or non-stick of choice)

  • In one bowl: Mix together zucchini, oil, eggs, and vanilla extract. Then mix sugar into the mixture.

  • In a separate bowl: mix all other dry ingredients together

  • Add dry mixture to wet ingredients and stir until combined.

  • Mix in chocolate chips

  • Pour the batter into the muffin liners (fill almost to the top of each)

  • Sprinkle extra chocolate chips on top

  • Bake for 20 minutes

  • Let cool for at least 10 minutes before enjoying!
