Recipe: One Pot Creamy Chicken Pasta

Creamy chicken pasta all in one pan, with mushrooms and spinach! I didn’t actually use cream for this, so it is a healthified version- but still tastes SO good. Watch the recipe reel here.

Ingredients:

  • Olive oil

  • Sliced chicken breast

  • 1 Onion chopped

  • Garlic minced

  • Mushrooms sliced (I use Baby Bella)

  • Spinach (I use almost a full bag because it wilts down so small)

  • 3.5-4 Cups of chicken broth

  • Pasta (you want a 1:2 ratio of pasta to broth)

  • 1/2 Cup parmesan cheese

  • Options for creaminess: reduced fat cream cheese, greek yogurt, milk, canned coconut milk

  • Salt and pepper

Directions:

  • Season chicken and cook on pan over medium high heat with olive oil until cooked through/ slightly brown. Should take about 6-8 minutes. Once cooked remove and set aside.

  • Add onions, mushrooms, and garlic to pan. Cook until tender and it should start to smell super yummy! Be sure to stir often, so the garlic doesn’t burn.

  • Add in chicken broth and bring to a boil

  • Ad the pasta and then down to a simmer for about 12-15 minutes, until pasta is cooked and most of the liquid is gone. Be sure to check in and stir a few times throughout this process. You can always add more liquid (water or broth) if needed.

  • Time to add the sauce! Stir in parmesan and creamy cheese or milk option - I did reduced fat cream cheese in this recipe

  • Fold in spinach

  • Add the chicken back in, give it some more salt and pepper, mix up and enjoy!
