Soup season is here and I have fully embraced it! I love stuffed bell peppers so decided to create a slow-cooker soup version. The slow cooker does all the work (and bonus your home will smell amazing!) Watch the recipe reel here.

Ingredients:

  • 1 pound ground turkey (browned on stove before)

  • 1/2 onion chopped

  • 3 bell peppers (I used 1 red, 1 yellow, and 1 orange)

  • 14oz can diced tomatoes

  • 14 oz can tomato sauce

  • Broth of choice (I used chicken)

  • Savory seasoning to taste( I used oregano and Italian seasoning)

  • Garlic powder

  • Chili powder for an extra kick

  • Salt and pepper to taste

  • 1-2 cups of Rice (cooked before putting in soup)

How To:

  • Put everything except for the rice in the crockpot.

  • Cook on low for 6-8 hours or high for 3-4 hours.

  • Mix rice in before serving or add rice to each individual bowl (this helps rice to not get mushy if you are saving it for meal prep).

  • Top with cheese and enjoy!
