Recipe: Chicken Orzo Soup

Ingredients:

  • 3-4 garlic cloves minced

  • 3 large carrots thinly sliced or chopped

  • 4 celery thinly sliced or chopped

  • 1 small onion chopped

  • 3 chicken breasts

  • 6 cups chicken broth (or more to cover ingredients)

  • 1 lemon

  • 1 cup orzo, pasta of choice or rice

  • Salt and pepper

  • Dried parsley

  • Dried thyme

  • Red pepper flakes

  • Fresh parsley to sprinkle on top!

  • Mushrooms would taste super yummy in this recipe too!

How To:

  • Add carrots, celery, onion and garlic to slow cooker. Season and mix with salt, pepper, parsley, thyme, and red pepper flakes.

  • Lay chicken breast on top and season some more

  • Pour chicken broth on top

  • Cook on high for 4 hours

  • At 3 hours 30 minutes remove chicken and shred. It should be easy to full apart with two forks.

  • Stir back into the slow cooker and add in the orzo

  • Finish cooking on high for the last 30 minutes

  • When done, squeeze juice of one lemon and sprinkle in fresh parsley. Stir together and enjoy!
